ALBUCLAR SG

Description:

Very pure and soluble microgranulated egg albumin

Albuclar® Special Grainis obtained with an innovative technique that leaves the characteristics of the initial product’s proteins unchanged, thus ensuring their effectiveness during oenological use and ready solubilisation in water. Its production is carried out in controlled microbiological conditions.

Generally egg albumins are difficult to disperse in water. Albuclar® Special Grain comes in a characteristic microgranulated form that allows for virtually instantaneous solubilisation.

Albuclar® Special Grain is particularly recommended for red wine clarifications, especially during the product’s final refinement phases in order to reduce the hints of tannicity and oxidised aroma.

CARBOCROMOS

Description:

High purity active decolouring carbon with high decolouring power

Obtained from selected raw materials using an activation process with low environmental impact, Carbocromos® has a high decolouring power and does not cause any organoleptic changes to the treated product.

The activation and purification treatments allow a product with a minimum leachable metal content to be obtained.

Its adsorbing action is particularly effective against anthocyanins and easily oxidisable oligomers, which are a cause of instability in white wines.

Decolorizing activated carbon, with high purity grade and strong decolorizing power.

CARBOCROMOS® ENO is a vegetal carbon with a particular decolorizing activity, obtained from selected raw materials. The activation and purification treatments allow to obtain a product with a minimum content of transferrable metals.

CARBOCROMOS® ENO is particularly effective in his absorbing capacity towards antocians and easily oxidable oligomers that cause instability in white wines. His high exchange surface allows a consistent reduction of pesticide residues and the toxic substances secreted by the yeast itself.

DECAGEL

Description:

Very pure alimentary gel specific for dynamic separation through decanters.

Developed with Perwine, the spinoff of the University of Verona, Decagel® is a water-soluble “pigskin” gelatine, with high electric charge and good gelling power. Due to these characteristics, it is the best suited product for dynamic separations using horizontal centrifuges for rapid and effective clearing of musts.

It produces a lightly opalescent homogenous solution, capable of being distributed proportionally by automatic in-line dosing systems.

The dose of Decagel® depends on the level of clearing wanted upon removal from the Alfa Laval Foodec Centrifuge system.

It does not originate from genetically modified organisms (GMO-free) and is free from the risk of BSE.

COMBO APPROACH®

Due to its characteristics it works perfectly in synergy with Decazym®, preferably following a preparation treatment of the crushed grapes with Decazym®.
